One material we are working with is Brewer’s Spent Grain (BSG). Studies indicate SG has protein amounts ranging from 19 to 30 %. Every year, more than 1 Million kilograms of Spent Grain (SG) are discarded as a byproduct of the beer making industry in Saxony alone. Yet because of its rich nutritious profile high in protein and fiber, SG has excellent potential as a food source. This amount of SG has enough food-grade protein to make 1,2 million plant-based sausages.
